Spiced Prawn and Potato Salad with Creme Fraiche and Sweet Chilli Lime Dressing

Serves: 4 – 6 as a side


Red Kelly’s Sweet Chilli and Lime Salad Dressing

1 kg Kipfler potatoes, cooked and sliced

1 Green chilli, finely sliced

1⁄2 Red chilli, finely sliced

500 g prawns, cleaned, shelled, cooked and chopped

1/2 cup mayonnaise

1/2 cup creme fraiche

1⁄2 cup coriander

3 spring onions

1 – 2 teaspoons crispy garlic

Salt and pepper



Combine potato, prawns, mayonnaise, creme fraiche, chillies and coriander. Season with

pepper and salt. Serve in a large bowl. Top with crispy garlic and lashings of Sweet Chilli and

Lime Salad Dressing. Perfect for a summers day!
