Coleslaw a la Asian Style
- 3 cups wombok (Chinese cabbage), shredded
- 1 large carrot, peeled, coarsely grated
- 1 large red capsicum, thinly sliced
- 4 scallions, ends trimmed, finely chopped
- 1tsp sesame oil
- 1½ tsp fish sauce
- 1½ lemon juice
- 1/2 tsp sugar
- 1/3 cup (80ml) of toasted, chopped peanuts
- 1/3 cup (80ml) Red Kellys Italian Dressing
Place cabbage, capsicum, carrot, scallion, lemon juice, fish sauce, sesame oil, sugar and Red Kellys Italian Dressing in a bowl. Toss to combine and sprinkle over with peanuts. Serve and enjoy!
For added zing, add some finely sliced birds eye chilies.
